Best Sunday Ever

Guess who had the best date night ever tonight?? I’ll give you 1 guess

We went to 2 of my favorite places in the world. I just want to preface this by saying that I have to be the cheapest date ever, I am easy to please for sure.

Back to my 2 favorite places – #1 – Subway

I could eat Subway probably everyday and be happy. I love sandwich places in general, but Subway is just so darn delicious (and it just so happens to be a healthy place to eat most of the time.)

So I did what any girl would do, since we had a healthy dinner, that left room to go to favorite place #2 – SWEET FROG!

I have been dying for some fro yo the past week, so it just so happens to be right next to Subway… (I didn’t plan that I promise)

Words cannot describe and pictures do it no justice.

I picked a mixture of cake batter, peanut butter and cookies and cream with chocolate covered raisins, kit kats and so many other things – I had a heavy hand when it came to the toppings. Oops. ๐Ÿ™‚

When I finished it all I may or may not have licked the bowl.

Cool Breakfast, Hot Day

Good morning and happy Sunday! I hope everyone is enjoying their weekend! I have spent my weekend doing a whole lot of nothing really – just hunkered down and trying not to sweat too much.

I have also spent most of the weekend thinking about family. A lot of the family has gathered in Kansas to lay my Uncle Bill to rest. Because of the outrageous airline prices I was unable to attend, but I have been sending my love and prayers all weekend long. Funerals, no matter how expected, are difficult, but memories can never be taken away. I am very thankful that we all got to visit with Uncle Bill just a short time ago for his son’s wedding and my cousin’s wedding in Niagara Falls. The last time I saw him, he walked me to my car in the parking garage and I will always cherish that moment – no matter how silly or small.

ย Breakfast

The next best thing to a lazy Sunday pancake breakfast is a lazy girl’s yogurt parfait. (Pancakes require stove use, which equals more heat, which equal sweaty Val, which equals grumpy – it’s a complicated equation I know, but you are smart.)

First start with a little Greek yogurt

A little Bear Naked Granola ( mind out of the gutter people), then some cut up strawberries and

ย … you have an instant and stove free breakfast. And did I mention it was delicious?

Now that my belly is full, it is time to decide what the day will hold. I think I should venture out today. (Do I have to??)


This is why I’m hot…

Let’s start with lunch shall we?

A delicious ham and tzaziki sandwich ๐Ÿ˜‰ The cool and creamy cucumber and yogurt sauce was exactly what I needed on a hot summer day like this one. On the side I enjoyed some cantaloupe slices and sugar snap peas.

This is why I’m hot…

The title of this post has multiple meanings today. First, the obvious – it’s about 102 degrees outside therefore I am hot, sticky and sweaty.

Second, because I felt like I was going to die without being able to walk outside today, my stubborn self put on my workout gear and said “I don’t care how hot it is, I’m walking around the trail and that is that. ” Let’s just say I made it about 30 min before I decided that I could really use a little AC right about then.

And Lastly, I thought I would share with you my walking playlist that keeps my feet moving on those long hot walks. I usually put my IPod on shuffle so I’m surprised with what song comes next… it gets my little heart excited. So here’s a little taste of one of my playlists.

Mom! The Meatloaf!

After too much thought, I finally decided on a workout yesterday. I really miss being able to workout outdoors, I am seriously lacking in my Vitamin D this week! This heat wave needs to end like now please!

Anyways, I decided on an old DVD that I haven’t done in awhile

And let me tell you, I am soooo sore this morning. The process of sitting is absolute torture! I guess that means that it worked. The DVD has 2 parts – Metabolic and Strength for a total of about 50 minutes.

Now on to something more important ๐Ÿ˜‰

Dinner Last Night

Meatloaf! Not your momma’s meatloaf that is…

It has oatmeal in it for a health benefit and extra oomph. Here is my healthified version…

Not My Momma’s Meatloaf

  • 1/3 cup BBQ sauce
  • 1 tsp. chili powder
  • 1 tsp. seasoned salt
  • 1 tsp. garlic powder
  • 2 large eggs
  • 1 small onion, finely chopped
  • about 1 lb. lean ground beef
  • 1 cup quick cooking oats
  • salt
  • pepper

1. Preheat the oven to 350 degrees and mist a 9×5 loaf pan with cooking spray.

2. Combine all ingredients in a large bowl and mix gently with your hands until incorporated. Gently pack the mixture into the loaf pan

3. Bake for 45 minutes then carefully remove and spread more BBQ sauce over the top and bake for 10 more minutes. Let it cool for a few minutes before slicing and then enjoy!

On the side I whipped up a simple summer salad by cutting up some red, yellow and orange peppers, cherry tomatoes, cucumbers and onion. Then, i drizzled some Fat Free Italian dressing over it and mixed it together (the longer you let it marinate and sit, the better it tastes!) And that’s it for that! So simple and so delicious!

It’s a great salad for a summertime BBQ ๐Ÿ˜‰


This morning’s breakfast looked a lot like yesterday’sย – except I added a new cereal that I bought yesterday to the mix

I think it has to be my new favorite – it was so good! I mixed in a little bit of my “cinnamon toast crunch” like yesterday and I was sad when I saw the bottom of the bowl ๐Ÿ˜ฆ Food does that to me sometimes.

I added some strawberries, vanilla unsweetened almond milk, yogurt, banana and the white pomegranate tea from yesterday also. Yummy!

I forgot how much I loved cereal, I was stuck in my oatmeal rut for the whole winter – but it is way too hot for all that.

Looks like I’m stuck inside again today – don’t want to melt in that VA heat.
