Merry Christmas everyone! We have a lot to catch up on since my last post, but we should get to the most important things like COOKIES. I know there are some of you out there who are in the need for a last minute sweet treat idea out there – ahem I’m talking to you, yes you. Well I have just the thing for you. These cookies are amazing, not only because they are no bake, but because they are the most delicious thing ever.

My mom made these for a cookie exchange and I put my own little twist on them. I’d like to say it’s a healthier twist, but they are still cookies nonetheless. Get your pen and paper ready….

Chocolate Chocolate Oatmeal No-Bake Cookies


2 cups sugar

1/2 cup cocoa

1 stick butter

1/2 cup Dark Chocolate Almond Milk

1 tsp. vanilla

3 cups quick cooking oats

1/2 cup peanut butter

1. Combine sugar, cocoa, butter and dark chocolate almond milk in a saucepan. On medium heat, bring to a biol for 1 full minute.

2. Remove from heat and stir in the peantut butter, vanilla and oatmeal.

3. Drop by spoonfuls onto wax paper and let cool for at least 30 minutes. THAT’s it!

After 30 minutes you have deliciously chocolatey cookies! I will be snacking on taking them to my sister’s house tomorrow.  Hopefully, there will be some left. 🙂
